This bright and vibrant recipe for Calamari & Cucumber Salad combines Matiz’s giant calamari & white beans with fresh cucumber, roasted red peppers, and tzatziki sauce for an easy Mediterranean meal. The smoky pimenton infused olive oil (from the calamari) and fresh lime juice make for a deliciously simple vinaigrette.

Ingredients:

3 cups. cucumber, sliced
1 cup. diced roasted red bell peppers, drained
1 tin. (4.1oz.) Matiz Giant Calamari with White Beans & Pimenton
1 lime, halved
1 cup. tzatziki sauce

Instructions:

1. Place cucumbers, roasted bell peppers, and calamari & white beans in a large bowl, squeeze
half of the lime over the ingredients, and toss to combine. Season to taste with salt and
pepper.
2. Divide the salad and tzatziki sauce between plates, garnish with the remaining lime for an
additional squeeze of citrus.
