Ingredients:

1 jar (10.2oz). Matiz Piquillo Peppers, drained and diced
2 tbsp. olive oil
2 tbsp. fresh basil, chopped
8 each. Italian bread slices, toasted
4 oz. fresh mozzarella, chopped or torn into bite-sized pieces
Salt and pepper, to taste

Instructions:

1. Place diced piquillo peppers, olive oil, and basil in a medium bowl, stir to combine the bruschetta mixture.
2. Spoon the mixture onto the toasted bread slices.
3. Top the mixture with mozzarella. Season with salt and pepper before serving.
