Pesto Tuna Pressed Sandwiches
Ingredients:
2 ciabatta rolls, split
1⁄4 cup. pesto sauce
2 cups. baby arugula, packed
1⁄2 cup. diced olive oil marinated sun-dried tomatoes
1 tin. (3.9oz.) Matiz Bonito White Tuna in Olive Oil, drained
Instructions:
1. Place the spilt ciabatta rolls, cut side up, on a small baking sheet. Divide pesto sauce
between the rolls and evenly spread.
2. Place arugula, sun-dried tomatoes, and tuna on the bottom rolls, and cap each sandwich
with the top roll.
3. Wrap the baking sheet with plastic wrap, covering the sandwiches, and place another baking
sheet on top. Weigh-down the baking sheet with cans or bottles (enough to compress the
sandwiches) and place in the refrigerator.
4. Refrigerate the sandwiches for 1-2 hours before slicing and serving.
