Spicy Sardine Cheesy Quesadilla

Ingredients:
4 each. fajita or taco-sized flour tortillas
1 cup. shredded jack cheese
1 cup. pico de gallo or salsa
1 tin. (4.2oz.) Matiz Spicy Sardines with Piri Piri Chili Peppers
Instructions:
1. Divide and fill tortillas with cheese, pico de gallo, and spicy sardines, placing the filling on
one-half of the tortillas. Fold the stuffed tortillas in half, concealing the filing.
2. Heat a large skillet over medium heat, add a little oil (you can use some of the olive oil from
the tin), and, once hot, cook the stuffed tortillas until golden brown on both sides, about 2-3
minutes per side. Repeat with the remaining tortillas.
3. Cut the quesadillas into quarters and serve with your favorite Tex-Mex sides.
