Ingredients:
2 tbsp. olive oil
1 small pkg. red, yellow, and orange mini bell pepper, sliced
1 cup. yellow onion, peeled and sliced
2 each. raw chorizo sausage links
1 cup. chicken broth
3 cups. Matiz Paella Rice, cooked
Instructions:
1. Heat olive oil in a large skillet over medium-high heat. Once hot, add the bell pepper, onion, and sausage links.
2. Cook for 10 minutes, stirring the vegetables occasionally, and rotating the sausages halfway-through.
3. Deglaze the skillet with broth and simmer for 10 minutes or until the sausages are cooked through.
4. Remove the sausages from the skillet and slice.
5. Add the cooked rice and sliced sausages to the skillet, stir to combine, and cook for 10 minutes or until the rice has absorbed the pan-drippings and is lightly browned on the bottom. Season to taste with salt and pepper before serving.
