Citrusy Sardine Stuffed Pepper Appetizer

This super easy appetizer comes together in 10 minutes or less and combines a delightful combination of ingredients, flavors, and textures. Bright, crisp, baby bell peppers make for an adorable appetizer base. Once halved, their natural little ‘scoop’ shape is ideal for stuffing. Matiz sardines are wild-caught from Mediterranean & Atlantic waters, giving them fantastically rich, briny flavor and this plump, tender texture. Everyone loves a little citrusy squeeze over their sardines, right? We most certainly do! Matiz takes that tradition one step further by in-fusing the sardines in a natural lemon oil. Combining the fresh peppers, flaked sardines, and lemon oil make for an enjoyably, light, and simple appetizer. We love adding a little sprinkle of garden herbs for even more vibrancy and flavor.

Ingredients:

8-10 baby bell peppers
2 (4.2oz) tins Matiz Wild Sardines with Lemon Essence
1/4 cup fresh herbs, chopped (tarragon, parsley or cilantro)

Instructions:

1. Cut the baby bell peppers in half, lengthwise, and, using a spoon, remove the pithy centers and seeds.
2. Remove the sardines from the tin, reserving the lemon-infused oil, and transfer to a plate or bowl. Using a fork, flake the sardines in manageable pieces (small enough to stuff into the peppers).
3. Stuff each pepper-half with flaked sardines and drizzle with reserve lemon oil.
4. Before serving, sprinkle the peppers with chopped herbs.
