Ingredients:

1 tbsp. olive oil
1 tbsp. honey
2 tsp. lemon juice
1 tsp. lemon zest
2 tbsp. fresh parsley, chopped
1 tsp. fresh rosemary, chopped
1 tsp. fresh thyme, chopped
¼ tsp. salt
¼ tsp. black pepper
3 each. garlic cloves, peeled and minced
½ cup. Matiz Valencia Almonds with Sea Salt, finely chopped
1 ½ lbs. salmon fillet
2 tbsp. Dijon mustard

Instructions:

Preheat the oven to 400°F and line a baking sheet with aluminum foil, lightly spritz with cooking spray.
Place olive oil, honey, lemon juice, zest, parsley, rosemary, thyme, salt, pepper, garlic, and chopped almonds in a medium bowl, stir to combine.
Place the salmon on the prepared baking sheet and brush with mustard.
Coat the salmon with the almond mix, using your hands to adhere the mix to the surface of the salmon.
Place in the oven and bake for 12 to 15 minutes or until the salmon reaches 145°F. Remove from the oven and set aside to rest for 5 minutes before serving.
