Ingredients:

4 slices. sourdough bread, toasted
1 cup. baby arugula or salad greens
1⁄2 cup. cherry tomatoes, halved or quartered
2 cups. premade egg salad
1 tin. (3oz.) Matiz Wild Caught Mackerel in Olive Oil

Instructions:

1. Top toasted sourdough slices with arugula, tomatoes, and egg salad. Divide the mackerel
between the open-faced sandwiches before serving. (Optional-Drizzle sandwiches with
some of the olive oil in the tin and sprinkle with cracked black pepper.)
