Ingredients:
1 tbsp. fresh scallions, chopped
1 tbsp. fresh parsley, chopped
1 tbsp. fresh basil, chopped
1 each. garlic clove, peeled and minced
1 tsp. orange zest, minced
1⁄2 tsp. black pepper
1⁄4 cup. Matiz Marcona Almonds, finely chopped
4 oz. goat cheese
4 cups. salad greens
1⁄2 cup. green grapes, halved
1⁄2 cup. red grapes, halved
Olive oil and balsamic vinegar, for drizzling
Instructions:
1. Place scallions, parsley, basil, garlic, zest, pepper, and chopped almonds on a plate or
shallow bowl and stir to combine.
2. Roll the goat cheese in the mix, gently pressing to coat. Slice the goat cheese into
medallions.
3. Divide the salad greens between plates or place on a large serving platter. Top the salad with
the coated goat cheese medallions and grapes. Sprinkle the salad with the remaining almond
mix and serve with olive oil and balsamic on the side for drizzling.
