Mediterranean Smoked Sardine Flatbread Pizza

This tasty flatbread has just the right elements of homemade and ease. In 30 minutes you can have a restaurant-quality pizza topped with oodles of fresh Mediterranean ingredients and succulent smoked sardines. These lightly smoked sardines are plump and flavorful, with just the right amount of smoke and earthy Spanish olive oil to enhance any meal. We lightly flake the fish and sprinkle them over the pizza dough, letting those enticing flavors infuse and meld with the other ingredients, enhancing and balancing the garlic, olives, onions, tomatoes, and arugula.

Ingredients:

2 tbsp EVOO
8oz raw pizza dough
2 tbsp minced garlic
1/4 cup diced olives
1/4 cup sliced red onion
1/2 cup halved tomatoes
2 Matiz Smoked Sardines fillets
1/2 cup fresh mozzarella
1/2 cup baby arugula
Salt and pepper

Instructions:

1. Preheat oven to 450°F. If working with a pizza stone, place in the oven to preheat.
2. Drizzle a large baking sheet with EVOO and stretch dough into a long, thin rectangle. Using a fork, poke or dock the dough to reduce bubbles.
3. Top dough with garlic, olives, onions, and tomatoes. Flake smoked sardines into small piec-es and add to the pizza dough. Pull or tear mozzarella into smaller pieces, add to the dough.
4. Place pizza in the oven, either directly on the pizza stone or keeping on the baking sheet. Bake for 15-20 minutes or until golden brown and crisp.
5. Remove from the oven, slice into wedges, and top with arugula. Season with salt and pep-per before serving.
