Ingredients: 

1 pkg. puff pastry dough, thawed    
1/2-3/4 cup Matiz Quince Paste  
1/2-3/4 cup Spanish-style Semi-Soft goat cheese  
1 eggs  
2 tablespoons water  
granulated sugar for dusting  

Instructions: 

1. Preheat oven to 400°F.  
2. Lay the puff pastry sheets out on a clean work surface (sprinkle a little flour on your work surface, if necessary) and using a 4 inch round cookie cutter, cut the puff dough into circles.  
3. Spoon 1 teaspoon of quince paste and 1 teaspoon of cheese into the center of each circle.  
4. In a small bowl, whisk together eggs with water.  
5. Brush the edges of each dough circle with a little egg wash and fold in half (creating half moon shapes). Seal the edges and press with a fork. 
6. Place empanadas on a parchment lined baking sheet. Brush the tops with remaining egg wash and sprinkle with a little sugar.  
7. Bake for 20-25 minutes or until golden brown. Let cool for 5 minutes before serving.
