Modern Tuna Noodle Casserole (or Cazuela)

This comforting tuna noodle casserole features a creamy sauce made with white wine, shallots, and capers, combined with artichokes, greens, and cheese for a deliciously savory flavor. Topped with buttery bread crumbs and baked until golden brown, it's a hearty and satisfying dish perfect for family dinners or cozy nights in.

Ingredients:  

2 tablespoons reserved oil from Arroyabe tuna  
1/4 cup shallots, peeled and minced  
1 tablespoon garlic, peeled and minced  
1 teaspoon capers 
1/3 cup white wine  
1/4 cup all purpose flour  
2 cup whole milk  
1 can Arroyabe Tuna, drained 
1 1/2 cups mixed greens (swiss chard, kale, spinach or arugula)  
1 cup artichoke hearts, chopped  
1 cup fontina or sharp provolone, grated  
1/2 cup sour cream  
1 teaspoon salt  
1/4 teaspoon black pepper  
1/2 teaspoon crushed red pepper flake (optional)  
4 cups cooked noodles (rigatoni, penne or fusilli) 
 
Crumb Topping:   
4 tablespoons salted butter 
1 cup panko style bread crumbs  
parsley for garnish  

Instructions:  

1. In a large skillet heat oil over medium heat. Sauté shallots, garlic and capers for 1-2 minutes or until fragrant.  
2. Whisk in white wine and lightly simmer for 2 minutes or until wine has evaporated by half. Whisk in flour creating a thickened slurry.  
3. Whisk in whole milk and simmer for 1-2 minutes or until sauce has thickened. Reduce heat to medium low.  
4. Stir in tuna, greens, artichokes, cheese and sour cream. Fold until blended and season with salt, pepper and crushed red pepper flakes. Lastly, stir in cooked noodles. Folding the noodles into the mixture until blended. Remove from the heat.  
5. Preheat oven to 375°F. Portion pasta mixture into casserole or cazuelas dishes.  
6. Melt butter in the microwave (20-30 seconds), cover with a paper towel to keep from splattering. Pour melted butter into a medium bowl and toss with bread crumbs until blended.  
7. Sprinkle buttered bread crumbs over casserole and bake for 20-30 minutes or until topping is golden brown and casserole is bubbly.  
8. Let rest for 10 minutes before serving.
