Rice Latkes with Saffron and Manchego

Ingredients:  

2 cups Matiz Paella Rice, cooked and cooled  
1 large egg  
1/2 cup yellow onion, peeled and minced  
1/2 teaspoon saffron, diluted in 2 tablespoons lemon juice  
1/2 cup all purpose flour  
1 cup manchego cheese, grated  
1 teaspoon salt  
 
1 1/2 cups vegetable oil (divided)  
 
garnish or toppings:  
2 tablespoons chives, chopped  
2-4 tablespoons sour cream 

Instructions: 

1. In a large bowl fold together (using a spoon or your hands) cooked rice, egg, onion, saffron, flour, cheese and salt until combined.  
2. Heat 3/4 cups of oil in a large skillet over medium-medium high heat. Form rice mixture into even patties and fry for 5-6 minutes, flipping halfway through, or until golden brown. Let drain on a wire rack or paper towels. Repeat this step until all of the rice mixture is gone. 
3. Top with chopped chives and serve with sour cream or any of your favorite latke condiments.   
 
How to Cook your Rice 
Bring 3 cups of water or broth to a simmer over medium high heat. Stir in 1 cup of Matiz Paella Rice, cover and cook for 15-20 minutes or until rice is tender. Rinse with cool water and keep refrigerated until ready to make the latkes.
