Roasted Vegetables with Herbed Almonds

Ingredients:
1⁄2 each. bunch broccolini or broccoli rabe, trimmed
2 each. carrots, cut into sticks
1 each. red bell pepper, cut into strips
1⁄2 each. red onion, peeled and cut into wedges
1⁄2 each. yellow onion, peeled and cut into wedges
4 each. garlic cloves, peeled
1 each. lemon, halved or sliced
4 tbsp. butter
1⁄2 tsp. salt
1⁄2 tsp. black pepper
1⁄4 tsp. smoked paprika
1⁄3 cup. Matiz Valencia Almonds with Herbs
Instructions:
1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.
2. Place the broccolini, carrots, bell pepper, onion, garlic, and lemon on the prepared baking sheet. Top the veggies with butter and season with salt, pepper, and paprika.
3. Place in the oven and roast for 12 minutes. Remove the baking sheet from the oven and sprinkle the veggies with almonds.
4. Return the baking sheet to the oven and roast for 5 minutes or until the vegetables are tender and the almonds have lightly toasted.
5. Remove from the oven and serve immediately.
