Spanish-Style Rice Bowl

Ingredients:

1 cup. Matiz Paella Rice
1 cup. vegetable broth
½ tsp. smoked paprika
½ cup. roasted red peppers
½ cup. marinated artichoke hearts
Salt and pepper, to taste

Instructions:

1. Place paella rice in a bowl and cover with cold water, soak for 30 minutes, and drain.
2. Place broth and paprika in a medium saucepan, stir to combine, and bring to a boil over medium-high heat.
3. Once boiling, add the rice, stir to combine, and reduce heat to low. Cover the saucepan and cook for 12 minutes.
4. Remove the saucepan from the heat and set aside, lid askew, to rest for 10 minutes or until the rice is tender and fluffy.
5. Divide the rice between bowls and top with roasted red peppers and artichoke hearts. Season your rice bowls to taste with salt and pepper before serving.
