Instructions:
1. Preheat the oven to 350°F and line two large baking sheets with parchment paper.
2. Place the softened butter and olive oil in the bowl of a stand mixer fitted with the paddle attachment and mix until combined.
3. Add the brown sugar, vanilla, and eggs to the bowl and mix until combined.
4. In a separate bowl, add the flour, baking soda, baking powder, and salt. Whisk to combine.
5.Transfer the dry ingredients to the mixing bowl and stir to combine the cookie dough.
6. Add the chopped dark chocolate to the cookie dough and gently stir until combined.
7. For large cookies, portion the dough into 3 tablespoon-sized pucks.
8. Place the pucks on the prepared baking sheets, evenly spacing about 1-inch apart.
9. Place in the oven and bake for 8 to 10 minutes or until the cookies are just beginning to turn golden around the edges.
10. Remove the baking sheets from the oven and set aside to cool on a wire rack before serving.
